Crispy Rolls vol. 1


Yesterday Mette and Dennis and their wonderful daughter Elinor visited and joined me in the execution of one important and long awaited goal: making crispy rolls - aka deep fryed maki rolls. Yes, it might sound weird, disgusting, not at all like sushi, etc. (you fill in the blanks)... but it's not!

Vol. 2 is this wednesday, and I think we will adjust the batter a bit - most of the recipes for tempura contains egg, but you could kind of taste the eggs and it didn't get as crispy as we had hoped for. The name alone had led us to assume exactly that... I will post the recipe when it's ready.

I also feared that the rice + cucumber + advocado would be overcooked or luke warm in a not good way, but it actually worked quite well. I don't have a deep fryer, so we used a very thin wok over gas. And one litre of oil. Yes sir.

As you can see, Elinor was satisfied, at least with the advocado. The nori seaweed was a bit too chewy for her taste + teeth.

Maki filling:
Avocado, cucumber, carrot, shrimps (boiled or stir fried with chili and garlic), mushrooms (fried in balsamico + oil), sesame seeds (roasted on a dry pan), and mint leaves. I can highly recommend mint leaves in maki rolls; I mostly use it in fresh Thai spring rolls, but it complements the vegetables, fish, and seaweed perfectly too.

Really useful video - I see now that we made some crucial mistakes! We especially had difficulties with the endpieces, trying to get them to close, but of course, batter does the trick - Thanks!
